You DO make friends with salad and this recipe proves it! Filled with many different vibrant ingredients that have so many amazing mood boosting properties. With a great mixture of protein, carbs and healthy fats this is a great salad to satisfy your hunger levels and impress your guests. I have used Carisma Potatoes in this recipe, they are low-carb and full of nutrients. You can get them from your local supermarket.
ROASTED POTATO & PEARL COUSCOUS & VEG MOOD BOOSTING SALAD
Serves 6 | 40mins
500g baby Carisma Potatoes
1 tbsp olive oil

2 cups rocket
400g chickpeas
1 cup mint & dill
1/2 red onion, thinly sliced

Maple Mustard Dressing:
3 tbsp EVOO
1 tsp Dijon Mustard
1 tbsp ACV
2 tsp Maple Syrup
1 lemon, juiced
2 tbsp Olive oil

Method:
Prepare your peers cous cous as per the packet instructions. In a baking tray add your baby potatoes (slice in half) with olive oil, herbs, salt and pepper. Mix well and bake for 20-30minutes or until golden. Fry the halloumi in olive oil and 1 tbsp of honey until golden on each side. To make the dressing simply add all ingredients into a jar and shake until well combined. Assemble the salad with all the prepared ingredients. Enjoy.
