PESTO PASTA WITH ROASTED TRUSS TOMATOES

This warmer weather has me craving fresh, wholesome foods and there is nothing better than this Pesto pasta recipe with ingredients all from my local grocer, Tony & Marks. 🍅
This can be served warm or cold and it’s so full of wholesome nutrients, vibrant flavours and mood boosting antioxidants. Give this recipe a go and let me know what you think!

PESTO PASTA WITH ROASTED TRUSS TOMATOES
Serves 4 | 30mins

Ingredients:
1 full bunch basil
1/3 cup pine nuts
1/4 cup pecorino cheese
1/4 cup Parmesan cheese
juice 1 lemon + zest
1-2 garlic cloves
salt and black pepper
approx. 1/3 cup good quality olive oil
torn fior di latte to serve
1 packet penne pasta

Roasted cherry tomatoes
1 packed cherry truss tomatoes
2-3 garlic cloves
1 tbsp olive oil
salt and black pepper

Method:
1. Pre-heat oven t0 180 degrees FF and place tomatoes and remaining ingredients into a baking tray and bake for 20 minutes. 
2. To make the Pesto simply add all ingredients into a food processor with 2 cubes of ice. The ice is an important step when making it in a food processor as it will keep the pesto green. Pulse until desired consistency.
3. Cook pasta as per packet instructions. 
4. Toss the cooked pasta through the pesto and plate up with a few tomatoes and torn fior di latte
