12 Days of Christmas Recipes ๐ŸŽ„ Mango, Tofu & Soba Noodle Salad
Catering for different dietary requirements over xmas doesnโ€™t have to be difficult! There are so many delicious, festive foods that can be made gluten free, vegan and dairy free. Just like this yummy recipe.
This is what I made at my Mindful Minds, Meals & Movement event and it was a huge hit!

TIP: Make sure to get a little bit of everything in each bite for a flavour explosion.
TIP 2: double check that all ingredients are gluten free/vegan for example double checking what soy sauce you are using!

I will just mention, some of the ingredients in this salad such as soy sauce and soba noodles are not always gluten free due to the ingredients used. For example. most soba noodles are made from a blend of wheat and buckwheat flour. For them to be gluten free they need to be made from 100% buckwheat flour.
However, you can find some great gluten free options to suit all dietary requirements.

Mango, Tofu & Soba Noodle Salad
Serves 6ย | 20mins
๐ŸŽ„ 1 pack soba noodles
- Cooked as per packed instructions
Peanut Dressing:
๐ŸŽ„ 1/4 cup Peanut Butter
๐ŸŽ„ 2 tbsp Tamari (or gluten free soy)
๐ŸŽ„ 1 tsp rice-wine vinegar
๐ŸŽ„ Juice & Zest of 1 lime
๐ŸŽ„ 1 tsp Rice malt syrup
๐ŸŽ„ Salt & black pepper
- Add all ingredients into a jar and shake until well combined.
Crispy Tofu:
๐ŸŽ„ 1 packet firm tofu
๐ŸŽ„ 2 tbsp Tamari (or gluten free soy)
๐ŸŽ„ 1 tsp Chilli powder
๐ŸŽ„ 1/4 cup corn flour
- Fry lightly on all sides in EVOO
Salad Ingredients
๐ŸŽ„ 1/4 Red cabbage, sliced
๐ŸŽ„ 1 cup edamame soy beans
๐ŸŽ„ 1 punnet cherry tomatoes
๐ŸŽ„ 1 red capsicum, sliced
๐ŸŽ„ 1 avocado, cubed
๐ŸŽ„1 cucumber, cubed
๐ŸŽ„1 spring onion, sliced
๐ŸŽ„1 bunch coriander, chopped
Garnish:
๐ŸŽ„Crushed Peanuts & Crispy shallots
Assemble salad and enjoy!!
