PEANUT ENERGY BALLS

Are you looking for the perfect pick-me-up recipe to have in the arvo when you need a little energy boost? This is the recipe you need! Packed full of protein and healthy fats, this is a favourite of mine to have in the fridge as a go-to healthy recipe. I highly suggest making these at the start of the week and keep them in an airtight container all week to snack on.

PEANUT ENERGY BALLS
1 cup almonds
1 cup pitted dates, soaked in warm water
1/2 cup @simplynutsaus natural crunchy Peanut Butter
1/3 cup cacao powder
1 tbsp chia seeds
1 tbsp raw honey
1/2 cup crushed peanuts (for garnish)

Method:
Soak your pitted dates in warm water for at least 20 minutes prior. Drain and set aside the date water (you will need it later).
Add your almonds into a food processor and process until a meal consistency.
Add all remaining ingredients into the food processor along with 3-4 tbsp of the date water. Process until the mixture clumps together in a large sticky ball (you may need to add more date water)
Roll 1 tbsp amount of mixture into balls and then coat in the crushed peanuts. Set in the fridge for at least 30 minutes before eating. Enjoy!
