Mood-Boosting Mushroom Tacos

It's Taco Tuesday somewhere so to celebrate, I have created a mood-boosting taco meal for you to make at home. It's so full of flavour and the best thing about this is it is jam-packed with ingredients that will leave you feeling happy thanks to their mood-boosting properties. Before I break them all down for you, I will just mention that this taco seasoning should be made in bulk and stored in a jar in your pantry. It can be used to season all types of veg and proteins and tastes so good! 

Now let's break down the mood-boosting properties of this dish:

Portobello Mushrooms - Portobello mushrooms may potentially boost mood due to their vitamin B6, vitamin D, antioxidants, nutrient density, and tryptophan content, all of which play a role in supporting brain function and neurotransmitter production associated with mood regulation.

Avocado - Avocado may have mood-boosting benefits due to its rich content of healthy fats, vitamins (such as B vitamins and vitamin E), minerals, and antioxidants that support brain health and neurotransmitter production.

Red Cabbage - Red cabbage offers mood-boosting benefits due to its high content of vitamins (particularly vitamin C and vitamin K), minerals, antioxidants, and phytochemicals, which support brain health and overall well-being.

Coriander - Coriander may provide mood-boosting benefits as it contains compounds like linalool and terpinene, which have been associated with potential stress-reducing and mood-enhancing effects.

Mood-Boosting Mushroom Tacos 

Serves 4 | 60-90 minutes

4 large Portobello Mushrooms

Taco Seasoning: 
4 tablespoons chilli powder
2 tablespoons cumin, ground
1 tablespoon smoked paprika
1-teaspoon salt
1-teaspoon garlic powder
1-teaspoon oregano
1-teaspoon black pepper

2 Tablespoon Olive oil 
1 Lime, juiced

Taco Filling:

Red Cabbage slaw:
2 cups Red Cabbage shredded
1 Large Carrots grated
1/4 Red Onion thinly sliced
2 tablespoons Fresh Dill chopped
1 tablespoon ACV
1 tablespoon Olive Oil
1/2 teaspoon Dijon Mustard
1/2 teaspoon Maple Syrup

1 avocado, mashed with 1 tbsp lemon juice + S&P
6 Soft shell tortillas 
Handful Coriander
1 jalapeño pepper, sliced 
1 tbsp. Vegan mayo (optional)

Slice your Portobello mushrooms lengthways and add them into a large bowl. Add in all the taco seasonings including the lime juice and olive oil and mix well until completely coated. Allow marinating for 30 minutes. 
Heat olive oil on a fry pan and cook each side of the mushrooms for 5-10 minutes or until golden and cooked through. Alternatively, cook this on a charcoal BBQ for an added smokey flavour.
To make the slaw simply add all the ingredients into a bowl and use your hands to mix through the dressing.
To assemble your tacos, heat your tortillas and add on all desired fillings.
