Bok Choy - Nutrient-rich profile, including vitamins, minerals, and antioxidants, which support brain function, reduce inflammation, and contribute to overall mental well-being.

Mood Boosting Baked Barramundi Parcels
Serves 2 | 20mins
2 barramundi fillets
2 tsp sesame oil
1-2 tbsp light soy sauce
juice + zest of 1 lime
1/2 tsp brown sugar
1 tsp fish sauce
1-tsp finely grated ginger
1 chilli, chopped (optional)
1/2 bunch Coriander
1 spring onion

Serve with
steamed bok choy
steamed rice

Mix the dressing ingredients together in a bowl until well combined.
Place barramundi onto a sheet of foil and baking paper. I like to use the stems of the Coriander as a bed underneath each fillet of fish. Place the barra on top and spoon on the dressing until it is fully coated. Optional to add on any addtional pieces of herbs, chilli etc.
Fold the foil over to make a parcel. Bake at 170 for 12 mins or until your liking. Serve with steamed rice and bok choy. ENJOY!
