Mediterranean Smashed Potatoes
Serves 6 | 45mins
500g Baby Carisma Potatoes
1 tsp sea salt
1/2 tsp baking powder
1/4 cup olive oil
1 tsp sea salt
1 tsp died oregano
1/2 tsp cumin
1/2 tsp smoked paprika
1/2 tsp chilli
1 pinch black pepper
Zest 1/2 lemon
2 garlic cloves, crushed
Crumbled feta
Chopped parsley or dill
Lemon zest
Method:
In to a saucepan filled with water, add the washed potatoes with the salt and baking powder. Boil until fork tender.
Pre-heat oven to 200degrees FF. Drain water from pot and allow potatoes to cool slightly before transferring to a flat baking tray.
Once cooled, add potatoes to baking tray and use the bottom of a mug to squash. Allow the steam to totally dissipate before adding the spice mixture. Generously coat each potato and bake for 45mins or until golden and crispy.
Once cooked and ready to serve, top with crumbled feta, herbs and lemon zest. Enjoy.
