Who doesn't love a delicious sweet treat to serve as a dessert of just as an afternoon pick me up? These Peanut Butter Cups are sure to hit the spot and are made up of wholesome and real ingredients! If you love snickers, you will LOVE this recipe!
PEANUT BUTTER CUPS
Serves 10 | 30 minutes + setting time
BASE:
1 cup almond flour
1 tablespoon cacao powder
2 tbsp desiccated coconut
2 tbsp coconut oil (melted)
1/3 cup date syrup
PEANUT FILLING:
1/3 cup runny peanut butter
1 tbsp tahini
2 tbsp rice malt syrup
1 tbsp coconut oil, melted
TOPPING:
100gm dark chocolate
1 tsp coconut oil
Method:
In a large mixing bowl, add all the base ingredients and mix well until combined. Press 1 tbsp of mixture into a silicone muffin tray. Place into the freezer to set.
Meanwhile, to make the peanut filling, add all ingredents into a bowl and whisk until creamy. Spoon mixture evenly on top of the frozen base. Place back into the freezer.
For the chocolate topping, simply melt the chocolate and coconut oil and stir well. Spoon the mixture onto the peanut layer and garnish with crushed peanuts. Allow to set in the fridge for at least 2 hours.
