CINNAMON RICOTTA DONUTS

Life is all about balance, right? This is how I live my life and enjoying things like donuts is something I never plan on missing out on. Who doesn't love a fluffy, moist, sweet donut that is still warm and dusted in cinnamon sugar? The thought of it just makes my mouth water. What I love the most about ricotta donuts is that they don't contain any yeast therefore, you do not need to allow time to let them proof. This makes it a quick and simple recipe that you can whip up, fry and eat within a good hour from start to finish. Here is my recipe, give it a go and let me know what you think! 

Cinnamon Ricotta Donuts
Makes 10 | 60 minutes
Ingredients:
250g ricotta cheese
2 eggs
1 tsp vanilla
1/2 lemon - just the rind
1/4 cup caster sugar
Pinch sea salt
1 cup SR flour

Cinnamon sugar:
1/4 cup brown sugar
1/4 cup caster sugar
1-2 tbsp ground cinnamon

Method:
1. In a large bowl of your stand mixer, add the ricotta, eggs and vanilla and beat until smooth.
2. Add in the dry ingredients and mix until well combined.
3. Spoon the mixture into a piping bag and pipe into round donut shapes on a small piece of baking paper. 
4. Using grape-seed oil, add into a saucepan and bring up to 180 degrees. Fry the donuts for 3-4 minutes until golden and cooked through.
5. Immediately drop them into the cinnamon sugar mixture and coat. 
6. Best served warm
