DAY 1 🎄 12 Days of Christmas Recipes 🎄 GINGER BREAD COOKIES!
I just had to kick off my 12 days of Christmas recipes series with an OG favourite of mine! I absolutely LOVE ginger bread cookies. They scream Christmas and have been a favourite of mine since I was a kid. Not only do they taste great but they are a lot of fun. Get creative with your icing and enjoy the process.
INGREDIENTS:
🎄160g butter, room temp
🎄120g Brown Sugar
🎄3 cups plain flour
🎄2.5tsp ground ginger
🎄2 tsp ground cinnamon
🎄1/4 tsp ground clove
🎄1/4 tsp nutmeg
🎄pinch of salt
🎄1 tsp Baking soda
🎄1/2 cup golden syrup
🎄1 egg
Method:
1. Begin by creaming the butter and sugar together until light and pale. This should take about 5 minutes.
2. Mix through the remaining wet ingredients and then sift through the dry ingredients. Mix until combined. This should form a very soft dough.
3. Spoon the dough onto some glad wrap and wrap tighly. Slightly flatten and place into the fridge to firm up. This should take a couple of hours.

4. Flour your surface and roll out the dough. It should be 1-2cm thick. Use cookie cutters to cut out your shapes. Place onto a lined baking tray and bake for 10minutes at 170 degrees. Take out immediately and allow to cool completely.
5. To make the icing simply mix all ingredients together until thick and smooth.
